Fresh Wasabi versus Fake Wasabi

We love Japanese food and make sushi at home most weekends. Recently I discovered that most wasabi paste doesn’t contain any real wasabi. It’s a mix of horseradish, mustard and food colouring – find out more about this in episode 5 of All the Best Stuff is from Japan. So of course I wanted to try the real stuff!

I found a company that grows wasabi in the UK called The Wasabi Company, who sell fresh rhizomes online. Wasabi is very difficult to grow, requiring precise conditions, which is why it’s so expensive.

Fresh wasabi has a much more delicate flavour than fake wasabi paste. It’s aromatic and fragrant, rather than being just hot like wasabi from a tube. Exposure to air causes the wasabi to lose its flavour, so you have to prepare it right when you’re ready to eat, and grated wasabi can’t be stored. However I found the rhizome lasts for about 2 weeks in the fridge, so you can use it several times. The fresh wasabi comes with instructions on how to keep it fresh in the fridge.
